    OCVTS Students Have Sweet Assignment!

    Students in the new classroom area surrounded by pies. In addition to pies, Bakery students are preparing artisan breads, dinner rolls, brownies, and cannolis.  

    BRICK, NEW JERSEY- Thanksgiving would not complete without dessert, specifically pies! OCVTS Culinary Arts Instructor Chef Dennis Melia and his Baking students know this all too well.

    This year the OCVTS Bakery will bake over 800 holiday pies including pumpkin, mincemeat, apple, cherry and blueberry. Most of those pies have been pre-ordered and customers will pick them up on Wednesday.

    Once the orders have been filled the students will continue to bake as many pies as they can which will be distributed along with the Thanksgiving meals for the needy to social service agencies throughout Ocean County.. Production at the bakery has been in full swing for the past week. Pie crust dough is mixed in forty pound batches, then measured and divided. While all students are trained in hand techniques to roll out pie crusts, special equipment is necessary at this time of year to press the dough into pie pans. Pies are then filled and into the large rack ovens they go.

    Demand was so great this year that several students have volunteered to come to school at 6AM in order to get the ovens heated and get an early start on baking.

    Culinary students have taken full advantage of the newly renovated addition to the bakery classroom. The spacious area has been used to package all of the baked goods and make ready for pick up.

    SWEET NUMBERS…
    -500 lbs. of dough
    -150 gallons of pie fillings
